However, this is a sure-fire way to ensure that the eggs you buy are the freshest of the lot. Although many shoppers only pay attention to the expiration date located on the carton, there is another digit that you should be paying attention to.
The number that needs to be considered before purchasing a carton of eggs is called Julian Date. The Julian Date is a 3 digit numerical value that is stamped onto the packaging in order to signify what day of the year that the egg was cleaned, processed, and manufactured. The digit starts at 000 and ends with 365 each number in this sequence represents a day value within the year. January 1st would be represented by the number 000 and December 31st would be represented by 365 and so forth.

When buying these eggs, it’s critical to pay attention to this 3 digit number and make sure the number is as close to your current date as possible. If you purchase a batch of eggs on January 15th, egg cartons stamped with 012, 013, 014, and 015 may be the ones that you end up purchasing. These eggs will have the highest nutritional value and leave you feeling satiated after the meal is consumed.
What to Look for When Purchasing Eggs
Along with the Julian Date, there are other factors that we need to look for prior to purchasing our eggs. As a rule of thumb, always open the carton in the store and inspect the eggs for any abnormalities or discolorations as these are warning signs that an egg has gone bad. An egg that is slightly fresh will make its way to the middle portion of the water or hang just above the bottom of the bowl.
