Peel four small red onions. Then slightly slice each onion at one end so they sit flat. Next, quarter the onions into eight wedges but stop a one-half inch from the bottom so all the wedges stay firmly together. Carefully put the onions in a bowl, pour three tablespoons of oil and two tablespoons of balsamic vinegar over the onions and gently mix. Lastly, spread the onions in a greased 9 x 13-inch baking dish, pour the remaining mixture over them and sprinkle with salt and cracked pepper. Cover and bake at 425 degrees for 25-30 minutes until they have opened up and are tender. Uncover and bake for 10 more minutes. Serve with capers if desired.
