Here are some easy recipes to incorporate lean protein into your daily diet that you will love, without a doubt; amazingly enough they take less than 30 minutes! And we all know how tiring it can be to even think about cooking dinner, especially after a busy stress-filled day.
The best part is you get to be creative, ingredients are very easy to find (you may have them in your larder already) all you need is a little imagination, to combine ingredients, a few recipes and even create your own!
Chicken and White Bean Pesto Stew
All you need is:
Onion
Garlic
Olive oil
Zucchini
White beans
Black pepper
Prepared pesto
Chicken broth
Diced chicken
Cook onions and garlic until soften, then add the broth, zucchini, beans, and pepper in a skillet over medium heat and broil for 2 minutes, finally add chicken (just to broil) and remove from heat. Add pesto and serve! Amounts vary to individual taste, start with 1/2 chopped onion, 1 clove garlic, 1-2 teaspoons olive oil, etc.
Exotic Stewed Chicken
All you need is:
Chicken thighs (no bones, no skin)
Zucchini
Garbanzo beans
Diced tomatoes
Cilantro
Chicken stock
Cayenne pepper
Ground cumin
Ground cinnamon
Heat the oil in a pot over medium heat, meanwhile season the chicken and cook it brown thoroughly and add zucchini and continue cooking, stirring occasionally, until browned, and add the rest of ingredients. (Turn the heat to low) Simmer for 10 minutes, until chicken is tender, add and pepper and garnish with chopped cilantro and serve!
Mint-Lemon Chicken
This simple recipe has only eight ingredients, but each one brings major flavor. The lemon adds the tang while the herbs add an exotic, homemade touch. Serve with brown rice and a side of broccoli for the ultimate comfort meal.
All you need is:
Olive oil
Chicken breasts
Lemon
Parsley
Mint
Basil
Salt and pepper
White wine
Place olive oil in a skillet on high heat, add chicken and sear, meanwhile blend 4 tsp oil, lemon juice, zest, and herbs, into a blender or food processor and pulse until well mixed. Heat the oven to 400°F (to roast) for 8 minutes. Place chicken on a plate, season and add the wine into the skillet, then add the herb sauce and cook on the stove top for 1 minute, remove and serve!
