Chicken Nuggets

So all your kid wants to eat is chicken nuggets, and you don’t want to feed your kids fast food or mechanically separated chicken pieces and parts, what is a parent to do? These nuggets have been a big hit with my family, give them a try and I hope yours likes them as well!

Ingredients:
3 boneless skinless chicken breasts
1 cup whole wheat Italian bread crumbs
1/2 cup grated Parmesan cheese
1/2 cup homemade ranch dressing (http://positivemed.com/2013/01/09/low-fat-ranch-with-no-sugar/)

Directions:
Preheat oven to 400 degrees F. Cut up chicken into small 1 1/2 – 2 inch pieces. Mix dry ingredients together in bowl. Dip chicken pieces in ranch dressing, then into breading, place onto lightly greased cookie sheet and bake 20 minutes or until juices run clear. Serve with additional ranch for dipping as desired. Enjoy!
