Fig, Tomato and Sweet Onion Salad

[Adopted from COOKING LIGHT magazine]
Total Preparation Time: 20 min
For this recipe, use any fig variety you like, or a combination of varieties.
2 tablespoon red wine vinegar
2 tablespoon extra virgin olive oil
1/4 tablespoon freshly ground black pepper
1/2 pound fresh quartered fig
2 cups torn romaine lettuce
1 cup cherry tomatos, halved
3/4 cup vertically sliced Vidalia or any sweet onions
3 tablespoon chopped fresh mint
1/4 cup crumbled feta cheese
[You can replace lettuce with spinach baby leaves]

Fig, Tomato and Onion Salad

Combine first 3 ingredients in a large bowl. Stir well with a whisk. Add figs, lettuce [or spinach], tomatos, onion and mint.toss gently to coat. Sprinkle with cheese.
